SHAKE ENCRUSTED CITRUS ROASTED CHICKPEAS

Ingredients

Chickpeas are so versatile. Really just crispy, crunchy pillows of happiness with a soft center that will absorb any flavoring you toss at them. Get creative!

1 Can Chickpeas (15.5)

1 TBSP Olive Oil

1 Orange for Zest and Juice

Shake (See Recipe)

Instructions

  1. Preheat oven to 425 F and spray baking sheets with nonstick cooking spray.

  2. Rinse chickpeas and pat dry. IF you have the time and desire you can remove the outer skins to ensure they become even crispier. Simply place on a sheet pan with a paper towel on top and gently roll - the skins will remove easily. Some times I do this, others I am just in too much of a hurry.

  3. Zest orange and add to a large bowl along with a sprinkle of Shake, ½ of the juice from the orange, and 1 TBSP olive oil. Once coated, drain the remaining liquid and discard.

  4. Place chickpeas on the sheet pan and roast for 15 minutes. Stir or shake gently and continue to roast until chickpeas are to your liking. Some days I like them softer, other times super crunchy. Watch closely as they can overbake quickly!

  5. Toss chickpeas into salads, wraps, or as I usually do, straight as a snack!
