Two Days Exploring Tremonton, Utah
On our push south to Arizona, we tucked in a quick, two-night stopover in Tremonton, Utah. We’ve visited Utah several times before and have explored all of the National Parks so on this trip south we were looking to dig a little deeper into the lesser explored areas. We settled at the Aspen Grove RV Park which is an excellent stop if you ever find yourself traveling between Salt Lake City and Idaho. Situated right off the highway with friendly staff, large pull-thru sites and minimal road noise, this will be one of our go-to parks when traveling in the area.
When I visit a new city, I always check the Visitor’s Bureau and, if we can, stop by the visitor center. Locals are friendly and know where the best hidden spots are, but on this quick stopover we needed to maximize our time so I’d researched our destinations well in advance. Tour the Bear River Migratory Bird Refuge Center and Auto Loop
Plan to spend a few hours for this excursion as there’s much to see at the Refuge Center as well as during your tour on the Auto Loop. The Auto Loop is a must-see, just be prepared in case you encounter a TON of bugs like we did! The area is gorgeous and teaming with wildlife. We also opted to walk the short trail which is a loop beginning at the center itself. We recommend going early to catch the birds in action which leaves plenty of time to drive to the Great Salt Lake which is stop #2.

Hike on the Great Salt Lake and see The Spiral Jetty
After a nice morning at the refuge, we headed to the Spiral Jetty early to avoid midday crowds. We planned to shoot drone video and didn’t want to bother others. There’s a lot to see on the way—such as the Rocket Garden and Golden Spike National Historic Park—but we drove straight to the jetty. It was beautiful and nearly empty. Make sure you have some emergency supplies as WIFI in the area is non existent!

Have a Late Lunch at Mim’s Bar & Grill, a Local Favorite!
We love finding outstanding restaurants that are small town watering holes with good food and Mim’s Bar & Grill in Corrinne was astonishing. They could easily plate their dishes at a five-star restaurant and charge $$$! The peaches were ripe so their seasonal menu showcased sweet, juicy peaches. I had the peach inspired tacos and Aaron had a burger with peach, both were complete flavor bombs. Don’t let the outside scare you off, it’s one of Utah’s oldest bars featuring ‘best burgers and coldest beer and EVERY Wednesday after 6pm, ladies eat free. Check their Facebook Page for more info!
